As a herbalist, I love inspiring others to weave herbs into their everyday routines. It doesn’t always mean taking something new — often, it’s about enhancing what you already enjoy. One of the simplest and most delicious ways to do this is by adding herbs to your favourite winter beverages.

When the days grow shorter and colder, a mug of something warm can be both comfort and therapeutic. Here are a few recipes to spark your curiosity and tempt your taste buds.

Hot Chocolate with a Mushroom Boost

Medicinal mushrooms are an increasingly popular health tool. They come in many forms, but mushroom extract powders are my go-to — easy to add to food or drink.
Their earthy flavour can be strong on its own, but chocolate pairs beautifully with it, creating a rich and nourishing blend.


Try this version:

  • 1 cup milk (dairy or plant-based), warmed
  • 1 cup hot water
  • 1 tbsp mushroom powder (single or blend, such as reishi, shiitake, maitake, lion’s mane, cordyceps)
  • 2 tbsp cocoa powder
  • 3 tbsp maple syrup or honey
  • A dash of salt
  • A dash of cayenne

Blend until frothy. Yummy and supportive of the immune system. This is a satisfying mid afternoon “snack”.

Cardamom Coffee

A traditional favourite in the Middle East and India, cardamom coffee is fragrant, warming, and surprisingly easy to love — even for coffee purists. The spice adds a sweet, citrusy note that softens the bitterness of coffee and adds a digestive boost.

Grind 1 cup of coffee beans with 1½ tsp of cardamom seeds (not pods) and brew as usual.

It’s a small change that makes your morning ritual taste like a treat.

Warmed Herb-Infused Wine

One of my clients recently told me she wasn’t ready to give up her evening glass of wine — it helped her relax at the end of the day. I suggested steeping calming herbs in the wine instead — a “win-win”!

Herbal mulled wines are simple, aromatic, and therapeutic. You can create blends to suit your mood — a relaxing bedtime version, a digestive after-dinner drink, or an immune-boosting winter tonic.

Sleepy Nightcap

  • 1 bottle red or white wine
  • 1 tbsp lavender
  • 3 tbsp chamomile
  • 1 cinnamon stick

Combine all ingredients in a pot. Heat gently until just below boiling, then cover and let steep for 30 minutes. Strain and sweeten to taste.

Homemade Chai

Few drinks feel as comforting as a steaming mug of chai. Grinding the spices yourself makes an enormous difference in flavour — the aromas alone will warm you up.

Spice Mix

½ cup cardamom pods
¼ cup cinnamon pieces
3 tbsp fennel seeds
1 tbsp cloves
1 tbsp black peppercorns

Coarsely grind all ingredients.

To brew

Simmer 1 tsp spice mix in 2 cups of water for 5 minutes. Stir in ½ cup milk, heat until warm, and add a black tea bag if desired. Strain and sweeten to taste.

Incorporating herbs and spices into daily routines is a great way to benefit from their health enhancing properties. These small herbal additions can transform everyday drinks into delicious rituals that nourish body and spirit. Try one — and you may find yourself creating new favourites this winter.
